Coconut Mango Purple Rice Pudding

Ingredients

Purple rice

Mango

Fine granulated sugar

Prepare all the ingredients and cut the mango into small cubes for later use.

Wash the purple rice in the bowl and drain the water. Add 3 cups of water into the bowl and soak it overnight.

Soak the purple rice overnight, put it into the Tatung Multifunctional Cooker. Add 1.5 cups of water in the outer pot, cover the pot, press the switch button, wait until the button pops up, add 20g of coconut sugar and mix well.

Add coconut milk powder, water, 30g coconut sugar, and salt, heat over low heat, stir slowly to melt the sugar, and let cool for later use.

Fill the glass cup/bowl with purple rice until it is 80% full, add diced mango and top with coconut milk to finish.
