Radish Cake with Dried Scallop and Shrimp

Ingredients

Sheered radish

450 g

Rice power for radish cake

Wash radish and peel it and shred it.
Soak the scallop in the 9 tbsp of water to soften it. Then shred it.
Keep the water soaking the scallop for use later.
Wash dried shrimp and dry it.

Add one full cup of water of Tatung measuring cup to outer pot. Put sheered radish in bowl and steam it by Tatung multifunctional cooker
When the switch of cooker jumps up, take out the bowl and do not drain the water in the bowl.

Put one kitchen parchment paper in the aluminum foil container. Or apply thin oil directly to the inside of the container as alternative.

Open the stove. Put two sesame oil in frying pan.
Frying the scallop and dried shrimp with light heat for 5 minutes. Then put it aside. Turn off stove.

Use the pan in step #4 without heat and add rice power , water, scallop water, salt.
Mix well all ingredients.
Add steamed shredded radish and its water (see step #2) to the frying pan and continue to mix all ingredients.

Turn on stove with light heat.
Stir mixed ingredient in step #5 and turn of the stove when mixed ingredient turns into paste.
Note: DO NOT move the pan away from the stove at this point.

Mix it with the ingredient made in step #4. Sprinkle the white pepper evenly.
Pour everything in the pan into the aluminum foil container.
Spread it and surface of the cake body can be lightly pressed and smoothed with a thinly oiled spatula.

Put the container on top of Tatung steam plate.
Put 2 full cup of water of Tatung measuring cup in outer pot. Put on the outer pot lid and push down the switch to start cooking.
When switch jumps up, open the lid and put additional 2 full cup of water and continue to cook. It takes about 55 minutes.

Take out the container from the cooker. Put it aside for cooling down.
Do not remove the radish cake from the container until it became hardened.
After remove it from the container, slice the radish case into several pieces. Fry the sliced radish case in pan with medium heat till both side of case turns burnt.
You are all set. Dip the case with sauce and enjoy it.
